10 MINUTE VEGGIE OMELET

INGREDIENTS:

Coconut oil spray.                                                1 cup- chopped broccoli                          1/4 tsp- cayenne pepper

1/4 cup- chopped tomatoes.                                4- large egg whites, beaten                     2 slices- Ezekiel Whole Grain flour- less bread toast

1 cup- of fresh spinach leaves.                            2 tbsp- of crumbled cheese

Directions

  1. Heat a nonstick skillet on medium heat—coat the pan with coconut oil cooking spray. Add veggies and cayenne pepper, and sauté for 4 minutes.
  2. Pour in eggs over veggies in the pan and add goat cheese. Cook for 3 to 4 minutes; flip the omelet and cook for 2 minutes. Serve with your toast.
